Baked Catfish Recipe

Catfish are known for being healthy and affordable. They can be cooked on the grill or pan-fried, but there is nothing more mouth-watering than a perfectly baked catfish fillet. This recipe is guaranteed to be a hit at the next family gathering, or among the family at dinner time.

Ingredients

  • 4 catfish fillets
  • 2 cups Italian salad dressing (any brand will work)
  • 2 eggs
  • 1 ½ breadcrumb (any flavor)
  • 2 teaspoons garlic powder
  • 2 teaspoons pepper
  • Cooking spray
  • Aluminum foil

Directions

  1. Preheat the oven to 350 degrees Fahrenheit
  2. Prepare the pan by coating the bottom and sides with foil. Then, spray the foil generously with non-stick cooking spray. This step remains essential to ensure that the coating on the fish fillet does not stick to the pan.
  3. Combine all dry ingredients (breadcrumbs, pepper and garlic powder) in a bowl. Mix well.
  4. Combine wet ingredients (Italian salad dressing and eggs) in a separate bowl. Whisk them until they are thoroughly mixed together.
  5. Dip one fillet in the mixture of wet ingredients. It should be thoroughly coated with the mixture.
  6. Next, dip the same fillet in the dry ingredients to completely coat the fillet, and place it in the baking dish.
  7. Repeat process with the remaining three fillets.
  8. Drizzle the rest of the wet mixture atop the fillets in the pan.
  9. Gently sprinkle the remaining dry mixture on the fillets as well for additional coating.
  10. Bake for 40 minutes, or until the fish can easily be flaked with a fork. Flip fillets halfway through cooking if desired.

Tips

  • If the fish are too greasy for your liking, simply drain them on paper towels. The towels, or napkins if you prefer, will soak up additional grease to give them the perfect flavor.
  • Add a cup of parmesan cheese to the dry mixture to tantalize your tastebuds.
  • Raspberry vinaigrette or another dressing of the same texture can be substituted for Italian dressing.
  • Flavored breadcrumbs, cornmeal or any other mixture can be used in place of non-flavored breadcrumbs.
